Hawaiian Chicken Recipe

Pineapple gives this chicken a sweet, tangy glaze with a little ginger warmth beneath it. The savory soy flavor keeps the sauce especially inviting around each piece. It's a dinner with plenty of bright flavor to enjoy, particularly where the sauce gathers at the edges.

A few quick notes

1. Reserve sauce first

Set aside the sauce portion before pouring the rest over raw chicken so it stays separate.

2. Use a snug container

Choose a bag or container only a little larger than the chicken so marinade surrounds the pieces.

3. Limit the marinade

Keep the marinating period within the given range; too long in pineapple juice can make chicken mushy.

Get to know the ingredients

Pineapple juice

Use unsweetened pineapple juice for the marinade, whisking it with sugar and the savory seasonings.

Chicken

Use boneless skinless breasts and turn the sealed bag or container to coat them thoroughly.

Ginger

Use minced ginger so it can distribute through the pineapple marinade with the freshly minced garlic.

The last little job

Reduced sauce for serving

Reduce the reserved sauce slightly in a small pot and serve it with the cooked chicken.

A little more help as you go

Check the thickest part

Check the chicken's specified internal temperature in its thickest part at the end of your chosen cooking method.

Freeze with sauce

Freeze cooked chicken airtight with its sauce for up to three months to keep moisture around it as it thaws.

A few questions you might have

Can I bake instead of grill?

Yes, use the baking method in the greased dish as an alternative to the grill method.

Can I freeze the chicken in marinade?

Yes, freeze it before cooking, then thaw overnight in the refrigerator so it marinates as it thaws.

How long can leftovers stay refrigerated?

Store cooked leftovers in the refrigerator for up to four days before enjoying them again.

How can I thicken the serving sauce?

If desired, stir together a little cornstarch and water to thicken the sauce as it reduces.

Does grilled chicken need turning?

Flip it once halfway through grilling, then continue until it reaches the specified internal temperature.

Any more cooking tips?

Storage: Fridge: While the chicken is marinating, I don’t recommend refrigerating for more than 2 hours. Chicken is easily broken down by the pineapple juice so too long and it will become mushy. Leftovers can be stored in the fridge for up to 4 days. Freezer: you can freeze this recipe before and after cooking. Before: freeze chicken in the marinade, then thaw in the refrigerator overnight (it will marinate as it thaws). Cook as directed. After: freeze the cooked chicken in an air-tight container for up to 3 months. I recommend freezing in the sauce so that it stays moist as it thaws.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
