A few quick notes
1. Check the carrots first
Simmer the vegetables until the carrots are tender before adding tortellini, so the pasta does not have to wait for them.
2. Keep the cream gentle
Add cream off the boil and avoid a hard boil afterward, since the creamy soup can split.
3. Wilt spinach briefly
The chopped spinach needs only about a minute at the end. Take the soup off the heat once it wilts.
Get to know the ingredients
Fresh or frozen tortellini
Both work here. Frozen tortellini goes straight in and needs about one extra minute; dried tortellini is discouraged.
Trimmed green beans
Trim the green bean ends and halve them before stirring into the vegetable base with seasoning and tomato paste.
Grated Parmesan
The Parmesan cooks with the tortellini in the broth. Keep some extra grated cheese for serving over the finished bowls.

The last little job
Season after the cream
Take the soup off the heat, taste for salt and pepper and serve warm with the extra Parmesan.
A little more help as you go
Prepare the base ahead
For advance batches, leave the tortellini out of the soup and add it fresh when reheating.
Loosen leftover soup
The tortellini keeps absorbing broth overnight. Add more broth when reheating if the refrigerated soup has become too thick.
A few questions you might have
Can I freeze this soup?
Freeze only the base, without tortellini, cream or spinach, for up to three months.
Is a slow cooker option given?
Sauté the base first, then cook with broth. Add tortellini in the last twenty minutes on high and dairy and spinach near the end.
Can I replace the cream?
For that variation, use full-fat coconut milk or cashew cream, with vegan Parmesan and vegan tortellini.
When does the tomato paste go in?
Stir it into the softened vegetables with green beans and seasonings, before pouring in the vegetable broth.
Does garlic start cooking with the onion?
Cook the onion, carrots and celery first, then add the minced garlic for thirty seconds before the remaining vegetables and seasonings.
Any more cooking tips?
Timing assumes the broth comes to a boil quickly. Add 5 minutes if your stove is slow. Fresh or frozen tortellini both work. Frozen goes in straight from the bag and needs about 1 extra minute. Avoid dried tortellini, which takes 12 to 15 minutes and overcooks everything else. Add the cream off the boil and don’t let the soup boil hard afterward, or it can split. Spinach needs about 60 seconds. Longer than that and it goes grey. Vegetarian as written with vegetable broth. For vegan, substitute full fat coconut milk or cashew cream for the heavy cream, use vegan Parmesan, and find vegan tortellini. For a slow cooker, sauté the onion, carrots, celery, garlic and tomato paste first, then transfer everything except the tortellini, cream and spinach with the broth. Low 5 to 6 hours or high 2 to 3. Add the tortellini in the last 20 minutes on high, then the cream, Parmesan and spinach in the final 5 minutes. The tortellini keeps absorbing broth, so this thickens overnight. Add broth when reheating. For make ahead batches, cook the soup without the tortellini and add it fresh when you reheat. Freeze the base only, without the tortellini, cream or spinach, up to 3 months.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
These are general safety limits, not a tested storage or freezing recommendation for this particular dish. USDA leftovers guidance · Safe cooking temperatures
