Kitchen notes · a little help before you start

Braised Lamb Shanks

Tender lamb shanks sit in a rich tomato and red wine sauce scented with herbs and cinnamon. The sauce gathers around the meat as it softens, giving each forkful a deep savory flavor with a little sweetness from the braised vegetables.

A few quick notes

1. Brown in batches

Sear only as many shanks as fit on the pot bottom, then repeat with the remaining lamb.

2. Submerge for braising

Arrange the browned shanks fully in the sauce, adding broth if needed before covering and moving to the oven.

3. Reduce sauce separately

Remove the cooked shanks, strain the braising liquid and simmer it in a saucepan until reduced by half.

Get to know the ingredients

Lamb

Season each side as the shanks brown, then set aside while you build the vegetable and wine sauce.

Passata

Rinse the passata bottle with some broth and add that liquid so the tomato left on the sides joins the sauce.

Cinnamon

Add cinnamon sticks with thyme, rosemary and bay leaves before the sauce simmers and the lamb returns.

A little more help as you go

Uncover toward the end

Braise covered for two hours, then remove the lid and continue for another thirty minutes.

Reheat with sauce

Reheat the lamb together with its sauce to help keep the meat from drying out.

A few questions you might have

Should the shanks be covered by sauce?

Arrange them fully submerged, adding more broth if needed before the covered oven braise begins.

Does the pot stay covered throughout?

Braise covered for two hours, then uncover and continue cooking for another thirty minutes.

How do I finish the sauce?

Remove the lamb, strain the liquid into a saucepan and simmer until reduced by half before seasoning.

Can I thicken the sauce further?

The directions allow equal parts cornstarch and water, added a teaspoon at a time until the sauce is thicker.

How long can cooked lamb keep?

Refrigerate it in an airtight container for three to four days. You can keep the sauce with it or store it separately.

Any more cooking tips?

Cooked lamb will last 3-4 days refrigerated. Keep these shanks in an airtight container. You can store them with the sauce or you can store the sauce in a separate container, but I would definitely suggest reheating them all together. That will prevent the meat from drying out! You can reheat these shanks in the microwave. If you aren’t a microwave fan, reheat either in a pot over medium heat on the stovetop or you can use an oven-safe pot covered with a lid. Bake at 300 F or about 15-20 minutes. You can also freeze your leftovers up to 4-6 months. Reheat using either the microwave, stovetop, or oven method. It will take about 30-35 minutes in the oven.

Storage & reheating safety

For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
