Additional recipe notes
Ingredients and Substitutions: Italian sausage : for a lighter soup, swap for chicken or turkey Italian sausage. Vegetables : I start this soup with a mirepoix but you can always add in chopped mushrooms, peppers or other firm veggies at the beginning, or softer vegetables at the end with the peas. Milk or cream : I recommend whole milk or half and half for the richest flavor and consistency, but low fat milk will work as well and will lighten the soup up further. Potatoes : I don’t peel my potatoes — just make sure they are clean! Storage : This soup keeps well in the refrigerator up to 4 days but I don’t recommend freezing it.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
These are general safety limits, not a tested storage or freezing recommendation for this particular dish. USDA leftovers guidance · Safe cooking temperatures
