A few quick notes
1. Keep the chicken juices
Transfer the mostly cooked chicken to a plate, leaving its released juices in the pot for the onion-and-flour stage.
2. Add broth slowly
Stir frequently as the broth joins the onion and flour mixture, helping it combine into a smooth, lightly thickened base.
3. Remove the bay leaves
Take out the bay leaves before returning the chicken and arranging biscuit dough over the soup for baking.
Get to know the ingredients
Dairy-free butter
Use part of the dairy-free butter for the chicken and the rest for the onion. Olive oil is a listed sautéing alternative.
Frozen mixed vegetables
The frozen vegetables go into the thickened base with coconut milk and bay leaves before the covered low simmer.
Prepared biscuit dough
Prepare the biscuit dough during the soup's simmer, then distribute roughly two-tablespoon scoops over the top before baking.

How to make it
0 of 6 steps completeMake room for Gluten-Free Chicken Pot Pie Soup (Dairy-Free!)
Review ingredients in your pantry before anything is added. Meal plans use your household size; grocery-only additions use the servings selected above.
The last little job
Test a biscuit center
Bake uncovered until a toothpick inserted into a biscuit center comes out clean, then cool the pot a few minutes before serving.
A little more help as you go
Use an oven-safe pot
Choose a Dutch oven or other oven-safe pot at the start because the assembled soup moves directly into the oven.
Shaped or dropped biscuits
The dough can be placed in formed scoops or dropped with a spoon. Both arrangements are allowed over the soup.
A few questions you might have
Can I freeze leftover soup?
The final step allows sealed leftovers in the freezer for up to one month, or refrigerated for up to three days.
Does the garlic have to go in?
The cooking step marks garlic optional. If using it, stir it into the softened onion with the flour.
Can I use the homemade flour blend?
You can use that blend, but it thickens the filling less. Add two tablespoons of cornstarch to help it thicken.
When should I preheat the oven?
Preheat to 400°F while the soup simmers and the biscuit dough is being prepared, before topping the pot.
Does the chicken need complete cooking during its first sear?
The first stage cooks it mostly through. It returns to the soup before the pot goes into the oven.
Any more cooking tips?
Dairy-free butter provides best flavor, but you can substitute olive oil for sautéing the chicken, onions, and garlic. *Our DIY Gluten-Free Flour Blend also works in this recipe, but it doesn’t thicken the filling as well. If using the DIY GF blend, we suggest adding 2 Tbsp cornstarch to help it thicken more. *Nutrition information is a rough estimate calculated with the lesser amount of chicken and without optional ingredients. *Loosely adapted from The Cozy Cook and our 1-Hour Vegan Pot Pies.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
