Additional recipe notes
You can make these blackened salmon tacos with skin on or off salmon fillets. Pat the salmon dry before seasoning. This helps to remove excess water which can cause the fish to become soggy when cooked. For best results, cook the blackened salmon in a very hot cast iron skillet. The salsa can be made several hours ahead of time and be kept covered in the fridge. The lime juice will help to slow the browning process of the avocado.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
