A few quick notes
1. Dry the fillets
Pat the halibut completely dry before seasoning so the surface can brown evenly in the hot pan.
2. Leave room
Arrange the fillets in one layer, working in batches when necessary so each piece has direct contact with the skillet.
3. Watch the butter
Lower the heat before adding butter, then watch for a brown color and nutty smell as it cooks.
Get to know the ingredients
Halibut
Season both sides of each fillet so the garlic powder, paprika, salt and pepper reach every bite.
Salted butter
Use salted butter for the sauce and stir occasionally while it browns in the same pan used for the fish.
Lemon
Squeeze both lemon halves into the butter, then simmer the sauce until its volume has reduced by half.

The last little job
Sauce underneath and over
Spoon some sauce onto each plate before adding the halibut, then drizzle more over the top.
A little more help as you go
Keep the fish warm
Cover the cooked halibut with foil while you finish the butter sauce in the skillet.
Give the crust time
Leave the fillets undisturbed during the first sear and look for opaque edges before turning them.
A few questions you might have
Should the sauce become thick?
The lemon butter sauce stays thin even after reducing by half; a thin consistency is expected here.
When should I flip the halibut?
Sear the first side for three to four minutes, until the edges turn opaque, then flip the fillets.
How long does the second side cook?
After flipping, cook the halibut for another two to four minutes, until the fish is cooked through.
Can I cook the fish in batches?
Yes. Keep the fillets in a single layer and cook separate batches if they will not all fit.
When do I add the lemon juice?
Add the lemon juice after the butter has browned and developed a nutty smell in the skillet.
