Additional recipe notes
Removing the membrane is not optional if you want truly tender ribs. Press the rub firmly into the meat; real pressure means real adhesion and a proper crust. Low and slow is the only way. Higher heat tightens the muscle fibers and gives you tough, chewy ribs. Make extra dry rub and jar it. It keeps for months and is wonderful on chicken, pork chops, and roasted vegetables.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
