Kitchen notes · a little help before you start
Cowboy Casserole
Golden tater tots cover a creamy beef filling, with cheddar tucked underneath and melted over the top. Corn and bits of bacon give each spoonful a little extra character. The crisp topping is especially good against the soft, savory filling.

A few quick notes
1. Line up the tots
After the beef mixture goes into the pan, arrange the tater tots in a single layer on top. A tidy top helps them bake evenly and gives the casserole that classic crisp-topped finish.
2. Save some cheese for the end
Only part of the cheddar goes into the skillet. The rest is sprinkled on after the casserole bakes, then it goes back in just long enough to melt over the tots.
3. Bake it uncovered
Leave the pan uncovered for the main bake. Covering it would trap steam, and the tater tots need the dry oven heat to brown up on top.
Get to know the ingredients
Ground beef
Use the 85/15 ground beef called for here and brown it in the skillet before anything else goes in. That gives the filling its base before the creamy ingredients are mixed through.
Cream of mushroom soup
The condensed soup goes straight into the skillet with the beef, corn, milk, sour cream, seasonings, bacon, and some of the cheese. It helps turn the filling creamy before it ever reaches the oven.
Bacon
The bacon should already be cooked and crumbled. Stir it into the beef mixture with the other filling ingredients so the smoky bits are spread through the casserole instead of just sitting on top.

The last little job
The last little job
Once the tater tots have baked, scatter over the remaining cheddar and give the casserole another 5 minutes in the oven. That's the moment that pulls the top together into a melted, cheesy layer.
A little more help as you go
Build it in the right order
The pan starts with the beef filling, then cheese, then the tater tots. Keeping the tots on top matters because they're the part that needs direct oven heat to crisp.
Use the baking range as your guide
The main bake is 40 to 45 minutes, uncovered. Start checking near the lower end, then let it keep going until the casserole has had the full chance to heat through and brown on top.
A few questions you might have
Do I cook the beef before baking the casserole?
Yes. Brown the ground beef in a skillet first, then stir in the corn, soup, cheese, milk, sour cream, seasonings, and bacon before layering it in the pan.
Does all the cheddar go into the filling?
No. Half of the cheddar is stirred into the skillet mixture, and the remaining cheese is saved for the final 5 minutes of baking.
Should the tater tots be mixed into the filling?
No, they go on top after the beef mixture and cheese are layered into the pan. Line them up before the casserole goes into the oven.
Is the casserole covered while it bakes?
No. Bake it uncovered for 40 to 45 minutes, then add the remaining cheese and bake it for another 5 minutes.
When does the bacon go in?
The bacon goes into the skillet with the filling ingredients after the beef has browned. It should be cooked and crumbled before you add it.
Storage & reheating safety
For cooked, perishable leftovers, refrigerate within 2 hours (1 hour above 90°F), using shallow containers for prompt cooling. Keep the refrigerator at 40°F or below, use refrigerated leftovers within 3–4 days, and reheat hot leftovers to 165°F, checked with a food thermometer. Follow any shorter package limit.
